Pesto Salmon

This vibrant dish pairs rich, flaky salmon with the herby brightness of pesto. It’s a one-pan wonder that’s elegant enough for guests but easy enough for a weeknight.

Ingredients:

  • 2 salmon fillets (6 oz each)
  • ¼ cup basil pesto (store-bought or homemade)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Lemon wedges, for serving
  • Optional: cherry tomatoes or asparagus, for roasting alongside

Instructions:

Serve:
Plate the salmon with lemon wedges and your favorite sides. Enjoy with rice, pasta, or a crisp green salad.

Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment or foil for easy cleanup.

Season & Top:
Place salmon fillets skin-side down on the sheet. Drizzle with olive oil, season with salt and pepper, and spread pesto generously over the top of each fillet.

Bake:
Roast for 12–15 minutes, or until the salmon flakes easily with a fork. Add veggies to the pan if desired—they’ll roast beautifully in the same time.
