Shrimp Scampi – A Fast & Flavorful Favorite
Garlicky, buttery, and bright with lemon, shrimp scampi is a timeless dish that feels fancy but comes together in just 20 minutes. Serve it over pasta, rice, or with crusty bread to soak up every drop of sauce.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 garlic cloves, minced
- ¼ tsp red pepper flakes (optional)
- ½ cup dry white wine or chicken broth
- Juice of 1 lemon
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
- Cooked pasta or bread, for serving
Instructions:
- Sauté the Garlic:
In a large skillet, heat butter and olive oil over medium heat. Add the garlic and red pepper flakes, sautéing for about 1 minute until fragrant. - Cook the Shrimp:
Add the shrimp in a single layer, season with salt and pepper, and cook for 1–2 minutes per side until just pink and opaque. Remove shrimp and set aside. - Make the Sauce:
Pour in the wine (or broth) and lemon juice. Simmer for 2–3 minutes, scraping up any browned bits, until slightly reduced. - Combine & Serve:
Return the shrimp to the pan, toss to coat in the sauce, and sprinkle with fresh parsley. Serve immediately over pasta or with warm bread.
